Made this in the morning and put it together at work. So easy, quick, and delicious!
Unpopular take: I love cooking with limited ingredients - it's when I have almost nothing left in the fridge that I make some of my best creations because the creative juices are FLOWING. I'm not overwhelmed by options so I just end up making simple and delicious meals, sometimes randomly pairing things that end up being incredible combinations. This hearty and healthy meal is only made up of four simple, whole ingredients, and the sauce comes together with a few pantry staples. The great thing about a classic protein/grain/veggie bowl is that you really can mix and match it with whatever you have on hand; but the key component of this bowl is the gochujang tahini sauce. This recipe is nothing without the sauce - she's the star of the show. Let's get into it.
Ingredients:
Base
Ground protein of choice, cooked and seasoned to your liking. I used a garlic and herb mix along with salt and pepper.
The texture is best if you use something ground or in a crumbly texture, feel free to use a plant-based replacement if that is your preference. It is usually mine but I didn't have any on hand.
Grated carrot
Sliced cucumber
Brown rice + grains quick-cooking packet
I use the packet to make this recipe SUPER quick but if you have the time definitely cook up some brown rice or your grains of choice!
Gochujang Tahini Sauce:
1 Tbsp gochujang
This is a Korean spicy red pepper paste - you can find this at your local Asian grocery store.
2 Tbsp tahini
1 tsp rice vinegar
1 Tbsp soy sauce
optional hot water to thin out the sauce
Additional seasonings: garlic powder, onion powder, salt to taste
Toppings:
Sesame seeds
Green onions

Look, I'm not going to walk you through how to cook your protein. Just make sure it's thoroughly cooked, and if it's a plant based protein, I can most def make a separate post talking about best ways to cook them and which ones I like the best.
In a bowl, start with a layer of the brown rice, then add your protein. Next add your grated cucumber and carrot, and pour your sauce over. Give it a good mix and enjoy!
You can easily customize this recipe to your liking: add a bed of lettuce, use whatever veggies you have on hand, or just take the sauce and use it for another recipe all together. Whatever you do, let me know if you try it and what you think!
